Is sous vide cooking difficult?

Sous vide cooking is as easy as 1-2-3:
  1. Seal foods in a sous vide ready pouch.
  2. Submerge the pouch into a low-temperature water bath.
  3. Finish by searing and/or serving.
Depending on the food you’re cooking, program the desired temperature for your water bath and set your timer. It’s that easy! Once the desired cooking time is complete, your food will be ready for searing and/or serving. Don’t be intimidated. Sous vide is truly one of the easiest ways to cook! You’ll get the most amazing and consistent results you can imagine.

What is the correct sous vide process?

Prep It - Prepare only the freshest and best, raw, uncooked food products with your unique recipes and blends of herbs and seasoning.

Seal It - Place all the ingredients inside your sous vide cooking pouch and seal using a vacuum sealer.

Set It - It’s as easy as setting the temperature on your fusionchef water bath to reach the desired internal temperature for your dish.

Walk Away - The timer on your fusionchef water bath will alert you when it reaches the desired set time.

Chill It - If you don’t finish off the cooked product to serve right away, quick chill it in a bath of ice water and store in your refrigerator or freezer.

Refresh It - Just before serving, return the chilled pouch to the water bath and heat the dish to your desired serving temperature.

Finish It - Once your fusionchef water bath alerts you that your product is at the desired temperature, remove it from the pouch; sear, grill or sauté very quickly (usually only one minute or less per side) for additional texture.

Plate It - With less time spent monitoring your dish, you now have more time to concentrate on presentation. Enjoy all the “oohs and ahhs” receive from your guests!



What is the correct sous vide process?

You’ll find required temperatures to range between 134-183°F (57-84°C). In our fusionchef cookbooks, we map out precise cooking times for you in each recipe so don’t worry—everything will come out perfect. As you become more comfortable cooking sous vide, your can start experimenting with the range of temperatures and times that work best for your custom dishes. Your fusionchef water oven will bring your meals up to the correct temperature and hold them there for hours without overcooking!

Cook times will vary depending on the proteins, vegetables or fruits being prepared. By following all guidelines in our fusionchef cookbooks, you’ll achieve the best results and get deliciously healthy, juicy and perfectly cooked meals that your fusionchef cooks for you! The time it takes to reach the desired temperature of the bath will always depend on the initial temperature of the water. The heat-up time for cold water takes approximately 30 to 45 minutes and 15 to 30 minutes using hot tap water.
