Chicken Fajitas

 

 

 

 

One of the easiest family feasts to serve mid-week that kids of all ages love assembling at the dinner table. Olé!

Ingredients:
2 pounds (.91 kg) boneless chicken breasts or thighs, cut into strips

1 large onion, sliced

½ of an orange

sweet bell pepper, cut into thin slices

½ of a yellow sweet bell pepper, cut into thin slices

½ of a green sweet bell pepper, cut into slices

½ cup (120 ml) chicken broth

1 jalapeno pepper, seeded and chopped

1 tablespoon (15 ml) chopped cilantro

2 cloves garlic, minced

1 tablespoon (15 ml) chili powder

1 tablespoon (15 ml) ground cumin

1 teaspoon (2 ml) ground coriander

2 limes, juiced

Salt and pepper to taste

1 package flour or corn tortillas, warmed

Preparation:
Sous Vide Prep 1. Fill and preheat your fusionchef water bath to 165F (74C). 2. Cut chicken thighs lengthwise into strips. 3. Combine all ingredients into a large bowl. (Reserve the tortillas for serving.) 4. Mix well and divide equally into two - 1 gallon (3.79 liter) vacuum pouches. Evacuate as much air as possible with your hands and seal. Alternative: Freeze the ingredients in their pouches completely overnight (or for a few hours) to allow a complete vacuum seal. 5. Submerge pouch completely by using your fusionchef universal rack in the water bath and cook for 8 to 10 hours. Finish Remove contents from both pouches, place into a large serving bowl. Compliment this dish with some warm tortillas and your favorite toppings. Optional: throw into a grill pan and place on a hot grill for 1 minute or two to give the dish some additional color and smokiness.
