Many vitamins and nutrients are water soluble, so when you boil your veggies in water the nutrients dissolve in the water. As the steam rises from your pot simmering on the stove, what do you imagine is in that cloud?  A bit of your broccoli's vitamin K, a smidge of your carrots' vitamin A, some of your cabbage's folate, maybe a few too many of your peppers' phytochemicals, and perhaps more of your tomatoes' health-protective antioxidants such as lycopene, vitamin C, and vitamin A than you care to lose.
