Cooking Sous Vide – Your Step-by-Step “How-to”
Follow these easy steps to get started with your first sous vide dish and find out for yourself how simple it is with fusionchef™. Or simply watch our video series with James Beard Award-winning Chef Jason Wilson preparing sous vide dishes using the Pearl and Diamond immersion circulators.
Prep only the freshest and best uncooked foods with your unique recipes and blends of herbs and seasoning.
Place all the ingredients inside clear sous vide cooking pouches and seal using a sous vide vacuum pack machine.
DIAL IT IN
With your Pearl or Diamond immersion circulator attached to a water bath, dial in the desired temp for your dish.
The timer on your fusionchef™ Diamond immersion circulator will alert you when the internal temperature is reached.
If you don’t finish the cooked product right away to serve, cool it in a bath of ice water and store at 37.4°F/3°C.
Just before serving, return your chilled bag to a water bath to heat the dish to your desired serving temperature.
Once at temp, remove the bag from your fusionchef™ water bath. Sear, grill, or sauté product for additional texture.
